Bhai Apple Cider was developed by Chevallier Guild alongside his entrepreneur friend Vivan Futehally, owner of Impossible Foods. Taking its name from the Hindi word for ‘brother,’ the cider is made from apple concentrate in Aspall’s facilities in Suffolk, where champagne yeast ferments Himalayan apples that are mixed with English apple juice. With fine bubbles and a fruit nose, Bhai has a mid-straw colour and overtones of soft tannins. Unrefined cane sugar from the plains of India is added to the mix for a balance of flavour. The cider is recommended as an accompaniment to any spicy food or enjoyed on its own, straight out of the bottle, with a slice of lemon.
